Having made a bad batch of cakes I was on a rescue mission.
Today’s cake reminds me of a recent Korean Drama.
Like the hero who saved his spare cash in a Piggy Bank, I feel a bit lost without a saved cake in the freezer.
This cake is quite special, being both gluten and dairy-free.
Its topping is a marriage of East and West, being a combination of Korean honey citrus and French marmalades.
As a family we are quite fortunate in not having any specific food intolerances.
However, when entertaining friends, we have had a few requests for gluten and dairy-free cakes.
