Five Minute Salad with Apple Vinegar Dressing

Gochugaru Girl likes her guests to eat well but sometimes it is tricky to work out the quantities of food required on a daily basis.

At this time of the year, with so many visitors arriving and departing, it is easy to lose sight of what is in the refrigerator, and whether it is in a state of perkiness or advanced decay.

Ignoring some items which have a long shelf life, and discarding others which had passed its use by date, I came across enough items to rustle up a super quick and super easy salad.

So let’s call it my Five Minute Salad. Speed is of the essence as the lettuce, apple and avocado will discolour as soon as you cut it.

The dressing is based on a classic French Dressing, but I have used Korean apple vinegar to enhance the taste of the apples in the salad.

The recipe feeds six people. As it has apples and walnuts, it is an ideal accompaniment to bread and cheese.

For the Salad:

1 head of Iceberg lettuce

1 red apple

2 x small avocados

2 medium-sized carrots

50 g walnuts halves

10 g parsley leaves

 

For the Dressing:

3 tablespoons extra virgin olive oil

1 tablespoon apple vinegar

1 teaspoon wholegrain mustard

1 teaspoon honey

How to Make:

Quarter the lettuce, remove its base and slice thinly.

Quarter the apple, remove its core and slice thinly.

Quarter the avocados, peel off its skin and slice thinly.

Peel the carrots and cut into fine strips.

Remove the parsley leaves from its stalk but leave them whole.

Roughly break up the walnuts into small pieces using your fingers.

In a large serving bowl, mix together the salad ingredients and dressing, giving it one or two stirs. Serve immediately.
